Patricius' Caesar Salad

As it turns out, the Romans were very fond of salads but whether or not this particular salad and its dressing existed in Roman times, no one knows for sure. If anyone is likely to be in the know though, it’s Patricius: apparently he has an innate inkling being one of their ancestors. Whatever his lineage, he’s proud of this simple but versatile recipe he’s created!

INGREDIENTS

For the salad:
One Romaine lettuce, washed and rinsed
2 oz walnuts
Fresh chives

For the dressing:
1-2 garlic cloves, crushed
2 tablespoons freshly squeezed lemon juice
2 heaped dessertspoons of quality mayonnaise
1 teaspoon Worcestershire sauce
6 tablespoons, 3 of Italian virgin olive oil and 3 of light olive oil
1/4 teaspoon salt
1 1/2 oz (40 g) Parmesan cheese, grated
Salt and freshly ground black pepper


Chop the Romaine lettuce into smallish rectangles and put to one side.

In a jug or small mixing bowl, add the crushed garlic and then all the other ingredients for the dressing, except for the grated parmesan.  Hand-whisk until smooth and then add the parmesan, seasoning to taste.

In a salad bowl, layer the lettuce and sprinkle the walnuts on each layer. Add a little dressing and sprinkle the remaining walnuts on top. This salad dressing is best served separately if not eating straightaway.

If refrigerated this dressing will last at least of couple of weeks.
