Vegetarian or Vegan Curry Vesages and Vaggies!

First vegetarian, then vegan. No, that’s not me but my daughter! I must say though that it’s opened up a whole new challenge for me personally and I’m finding that I’m loving the results.

As this was such a successful vegetarian recipe, I‘ve now created a vegan version and I’m happy to say that my daughter loves it too. Any avid meat-eaters won’t even notice that their main ingredient is missing as they are totally infused with flavour and a little bit spicy – but not too much. Of course, they may have an aversion to rocket or aragula (like our dog, Tubbs) but the debate should create a helpful diversion!

Unfortunately this recipe is not for those with nut allergies.
